Bake a batch of these buttery minor French cakes to have with a cup of tea or coffee.

Products and preparation: You will need a 12-cup madeleine tray.

  • 2 free of charge-variety eggs
  • 100g/3oz caster sugar
  • 100g/3oz plain flour, plus added for dusting
  • one lemon, juice and zest
  • tsp baking powder
  • 100g/3oz butter, melted and cooled slightly, plus additional for greasing

Preheat the oven to 200C/400F/Gasoline six. Brush the madeleine tray with melted butter then shake in a minor flour to coat, tapping out the excess.

Whisk together the eggs and the sugar in a bowl till frothy. Lightly whisk in the remaining ingredients. Depart to stand for twenty minutes just before meticulously pouring into the prepared madeleine tray.

Bake for 8-ten minutes, or until the mixture has risen a small in the middle and is fully cooked via. Transfer the madeleines to a wire rack and depart for a handful of minutes to cool somewhat. These are greatest eaten inside an hour of cooking.
